An introduction to Grifola frondosa (AKA Maitake, Hen of the Woods)


Maitake mushrooms, scientifically known as Grifola frondosa, are a type of edible fungi that are native to the northeastern part of Japan. These mushrooms are also commonly referred to as "Hen of the Woods" due to their resemblance to the fluffed tail feathers of a nesting hen.
